Way of the Samurai: the one you start at, you need to complete the main missions to progress.
Way of the Strong: harder enemies, acess to divine gear.
Way of the Demon: Red Enemies now appear in each stage, sometimes as a new enemy and other times to replace old ones. These have unique buffs, like "debuffs get the reverse effect", "lightning weapon", "remove buffs when they hit you" etc. These are also faster, have more ki and ki-recovery.
Way of the Wise: more of the above start appearing, DLC enemies also appear in the main game now.
Way of the Nioh: more of the above, the hardest enemies replace older ones. So you'll have a hard time.
You acces the next difficulty in line by beating Queen's Eyes on your current difficulty. Aggression isn't increased.
The Abyss does give bosses the ability to cancel animations mid-animation into another to punish greedy players.
EDIT: can't comment on the PvP as I was already a few playthroughs deep, but I believe you have to beat region 3.

NG = "way of the samurai
NG+ = "way of the strong"
NG++ = "way of the demon"
NG+++ = "way of the wise"
NG++++ = "way of the Nioh"
from NG++ "way of the demon"
you will start seeing new enemies "as in, taken from DLC areas, new placements, new kind of demons "red colored demons"
and pretty much everything else you mentioned will increase from Demon and upwards.
NG+ modes here sounds really nice, not just lazy increased enemies stats like in many games, can't wait to try those modes.
Just one last thing -

You mean just the bosses inside "that" Abyss - if I read right it's just a bonus dungeon, no? No ability to cancel animations for main-game mission bosses?
The cancel animation thing for them sounds really awesome.
I don't consider these 'diffiulty' levels any more than I do in Bloodborne NG+ games.
NG is ball-busting hard and it only gets harder from there. Not exactly what people are looking for in 'difficulty levels'. That would be Easy, Medium, Hard, Nightmare, but instead we get nightmare, more nightmare and even more nightmare.
Abyss is a huge dungeon with 999 floors . You can access after beating way of samurai but cannot pass beyond 30 until you defeat way of the nioh . Basically ... the NG ( way of samurai) is just tutorial . The remaining NG+s are like “entrance exams” . The true game and the essence of nioh exist in Abyss .

Given the game's nature; it's pretty easy/fair(?) at the start. After your first run (NG) the game gets a little difficult, but from NG+ you yourself can be difficult :)
Any certain build with minimal stats can and will make it a breeze. Even if you have no build, but a general sense of logic in using your stats points + weapons + everything else it gets easy rather quickly.
Games like this usually depend on repeated encounters, you only want to be OP not just to one-shot everything, but also see your work impact the highest difficulty with some sort of challenge I guess :v
