Most of the campaign (excluding tutorial mission, final mission, and some side missions) you can play blind co-op. You just need to use the shrine from the map and select Yokai Realm with a companion. Also need to have a password set up so you don't join up with randoms.

is it like dark souls 2-3 co op where they stay with u for only a little bit or they stay with u throughout the game game/till u log off/etc?

It's been a while since I played, but you go to kind of a world map overlay between missions where you select your next mission. You will need to partner up before every mission and you will separate at the end of that mission.

You can only summon 1 player. I do believe it's drop in drop out coop system.
You can read more about it here https://nioh.wiki.fextralife.com/Online

If you play with a friend summoned via the tori gate they will stay with you the entire mission and any subsequnt mission you want to play. However if you use the cups to summon a random they will be kicked after the mission.

On the PS4 they stay with you for the whole level, not just one of the bosses in the area. Some areas have multiple bosses so they will stay until the entire level is complete (provided you or the host dont die).

This is based on summoning someone at a shrine in game, I believe there is another way to play co-op however I believe it requires one or possibly both players to have completed the mission (I think this is so you can spam missions to farm gear).

When we leave after finishing any mission, do we save progress in the game or do we need to play it again like dark souls III? because that's why we didn't get Dark Souls III

game provides 2 different types of coop interactions:
1) one of which somewhat similar to DS experience (using ochoko cups on altar to summon person in your mission until one of you dying or you finished the mission. Summoned person should previously clear this mission himself)
2) the other option is closer to proper coop (in mid-mission map interface, select your base on the map, then "torii gate", one of you select "host" option, other "search partner" option. Once you connected host able to choose any mission available to both players and when you beat it - both of you beat it).

As I mentioned second option is only available on the map interface, so in order to use torii gate both of you have to beat tutorial mission and first actual mission.
Also, in both options you want to set up identical password in network section of the options menu.
