You play as a set character, who is male. But there are transformation 'things' you can buy at the hidden teahouse to make you look like one of the female characters. Only downside is that you only see the armor that character normally wears.

There are female NPCs in the game, each of whom have a static default physical + costumed appearance. When you buy their respective "looks' from the teahouse, you take on their default appearance. It's essentially a full body + armor transmog. So no matter what armor you have equipped, your character will always have the same default appearance that the NPC defaults to as long as you have that purchasable transmog option equipped.

Transmog options are available for both male and female NPC characters, and these appearances cannot be further customized from their default state.

You still get all of the stats & attributes from your equipped armor, yes.

No. The teahouse isn't available until later in the game, and some of the transmog options will require a decent bit of grinding.
