I think you can't change it once you've started a career. The only way to change it is to start a new career.

well, it's funny, cause it seems it is quite bugged.... When i started a game, my manager ws just perfect, then when i loaded the first time, it was a random ugly dude... since i started 3 games since the beta, i just want to do a real one finnally, so i won't start a new one just for the manager avatar.... it would be nice to have a way to remoove that ugly man from main page....

You can't, in PES you can change your manager appearance whenever you want but in FM you can't do it, sorry.
