What is the point of the cameras? what they do?
So...

In System Shock 2 once a camera spotted you Xerxes announce about an intruder and a bunch of mutants go after you. But here what do they do?

Cameras and computer nodes form 'level security', of which the main effect in-game is to lock certain doors, and it's also tied in to the enemy respawn system; get level security to 0 and no more respawns.

I'm not sure that being caught by a camera calls reinforcements, but I have noticed that nearby enemies can become alert if you're caught by a camera.

Nice, I didnt knew about them noticing me if the cameras caught me

It may have just been my perception, something to test properly perhaps.

The cameras behave like they do in the original: they allow Shodan to call reinforcements to the level. The lower the security, the less she can bring back after you take down her minions.

They do no such thing. In the original, cameras do not "see" you. Destroying them just lowers the security level for that deck. Respawning will happen on levels even where the security level is zero.

All lowering the security level does in the original is grant access to some otherwise locked doors.

According to a dev in discord, in the remake, a camera spots you and provides information to enemies within a radius dependent on difficulty.

That said, I've never seen it matter.

Yeah, that makes sense. Peeking inside the game files, I saw that the amount of time that it takes a camera to notice you differs by difficulty. Then again, I saw that the food items have values set for their calorie count, which isn't just flavor text. And I don't think there's any mechanics that actually key off that data.

I have yet to see real respawn on cleared levels, in a few cases the mechanism has to be dealt with, too. Like the robot production on Research, or the bomb bots which crawl out of this small door in one level all the time. In some rooms is a respawn mechanism, but it usually works only once (the platforms coming out of the floor).
Might be different on level 3, but I am content with 2 :)
