What does "Copy blessing" and "blessing copied" mean?
Sometimes, when I click on the blessing deck icon, I get a choice to copy blessing, or sometimes blessing copied. What do these mean, please?

And, how come sometimes I don't get this option and sometimes I do?

I'm guessing you're using a blessing of the gods.
First you need to understand that the blessings deck is a 30 cards deck that contains only blessings and is shufled at the beginning of the game from your available blessings in the collection and the standard blessings deck.
This 30 cards deck acts as you time limit. Every turn a card is drawn and put face up, which is what you see in the small circle icon on the top right of the screen, and at the end of your characters turn it's discarded. Every blessing is different and has unique properties that aid in certain situations. For example a blessing can add 2d6 to your combat check, or one extra dice to any other check that isn't a combat check.
With this in mind, the blessings of the gods is the most simple type of blessings, with no unique properties of its own. It's only property is that it can copy whatever card is displayed at the top side. This is where the copy thing comes from.
If you see a blessing of lamashtu at the top, you can bury your blessing of the gods to add 2 dice to any combat check, even though the blessing of the gods card has nowhere in the text written you can do this.
You can only do this with blessings of the gods. All other blessings behave exactly as written in the text under any situation.

Interesting. I was just playing tutorial #4, and it was all blessings of the gods. It was preset because it's the tutorial. I'm still not exactly sure how the copy thing works, but I'll see if I can figure it out from your explanation once I get into the real game after the tutorial.

The tl;dr version of it is:
If you have a blessings of the gods in your hand, look at the blessing on the top right side of the screen, next to the number.
Whatever text this card has written, it will be the same text written in the blessing of the gods.

I REALLY appreciate you helping me, but I'm just not understanding the blessings at all.

I started my first real mission after the tutorial. There are a bunch of different blessings in the blessings deck. How do I use them? I see a bunch of different blessings with very nice abilities, but how do I use them? I'm so confused. Sorry, I'm lame. This really needs to be explained in the game in a tutorial.

You use them by using a blessing of the gods from your hand when a blessing you want to "copy" is at the top of the blessings deck. Then your own blessing of the gods will BECOME that blessing for that turn.

Aha! So, the blessing card in my hand will change to whatever blessing is currently the top blessing deck card? The card in my hand will actually switch? I have to try that again. I never noticed my card changing.

[edit] Ok, I see. I failed to completely read the Blessing of the Gods cards. It says right there at the bottom of the card how the copying of the top blessing card works. Silly me.

So, now that I think I really understand blessings, can we find other types of blessing cards in our travels, to add to our decks? So far, my guys only have Blessing of the Gods cards.

You can find more, in fact I would say getting other blessing cards are usually worth more than any other cards types.

So, in the end, what does the button that says "Copy Blessing"/"Blessing Copied" when you zoom on the blessing deck, as OP asked?
If you don't know what they meant, it's the same kind of button that appears when you zoom in a card that can be Discarded/Displayed/Buried/etc.
The button seems to change when you click it, but I don't appreciate any change in the gameplay whatsoever after doing that...

It's largely there for Blessing of the Gods and Favor of the Gods power to copy the top card of the blessing deck instead of being just a "basic" blessing.

Usually it's pretty harmless to let the BotG card duplicate the blessing deck.

However, per the powers of a FotG, the player is allowed to play an additional blessing on the check or copy the top card. Lots of times it may be preferable to use a FotG to play multiple blessings, than play that one and have it mimic the top card.
