You really need to kill yourself the human for that. Environment / monster kill aren't your fault.
It's the same for the human under mind control; if they explode after rushing you, it's not a kill.
Destroying the shuttle with the PC on the Bridge isn't a kill either.
You can see the number of human killed just above the number of Mimic killed.
if the line isn't there, it's because you didn't kill any.
I assume you are going after the "I and it" achievement. The most effective way to gain this is to check your human kill stat and do a quick save immediately before attacking a human. After the human goes down, check your kill stat and confirm whether you got credit for the kill. If not, load your save and try again. You need 42 credited kills for the achievement.
For the first, you cannot let anyone die, which can be difficult in the Crew Quarters. You cannot have someone die at Cargo Bay A during the fight at the gate either. So if a monster kills a crew member, it doesn't show up as your kill, but it counts against "save everyone", which is not the same thing as "don't kill anyone".
The second one is also difficult, because everyone must die by your hand - not monsters, not environment, only by you. The tricky part here is again in the Crew Quarters, where people can die without your "help" in two places. For this you can check your data tab for "humans killed" and make sure everyone present is accounted for.
If this is about something else, death by monster doesn't count against you.
That's not been my experience. I got "Thou and I" on my first play through without even knowing about that achievement. Since I wasn't purposely going after it, I made no attempts to save anyone so that every mind controlled human in Crew's Quarters died, but none at my hands. I did save everyone in Cargo Bay, but I'm not sure that is necessary. Others on this forum have reported that the only criteria required for the achievement is to have no human kills recorded in your stats.
