The race that gets the best interactions: Elves
I find this to be true through all games. I do prefer all mage origins though but not for everyone.
in origins i always went human female>sword n shield
DA2 i always go fem hawke two handed warrior
for inquisition i always go human female as for classes well to me they are all pretty boring but i like archery rogue the most
You can change difficulty when ever you want and there is no achievment or reward playing on higher difficulty. Difficulty setting is just there to fix you personal impression that the game is too hard / easy.
Enjoy the games. They are ment to be played multiple times with different classes/races/origins.
If you prefer warriors then go dual wielder.
city elves are oppressed and abused - you could be a 1 in a million exceptional hero story and show all the dirty shems who abused your kind what's what.
dalish elves live in the forest, in tune with nature, their interactions with humans are very rare and seldom positive. they delve into ancient ruins to learn more about their race's past. humans regard them as savages. if you're a dalish elf, you can expect some extra interactions later in the story.
dwarves are pretty much the same as they are in any other fantasy: craftspeople and merchants. the most important things to them are history and tradition. the noble dwarf origin goes heavy into politics and will come into play again later in the story.
mages are special in that if you're a mage, you can ONLY be a circle mage. mages are feared and heavily controlled. they live basically as prisoners all their lives. one step out of line, and the chantry puts you down or makes you tranquil. the mage origin also comes into play again later in the story.
the human noble origin also has pretty cool implications later in the story. you grow up a little sheltered and privileged but misfortune leads to you having to forsake your homeland. you can have a neat revenge/redemption story later.
class-wise, i'd go with whatever you enjoy playing the most. if it's your first time with this game, you can't go wrong with a warrior. easy to control, hard to kill, just run at enemies and do damage. mage and rogue are a little more fiddly gameplay- and build-wise.

for DA2, there's only Hawke and rogue/warrior/mage. personally, i like mage because it gives you a little more perspective on the battlefield and because it makes the romance with Fenris extra spicy. but it really, really doesn't matter much what you play in DA2.

for DAI, if you want the best/hardest hitting story experience, play a female elf and romance Solas. it will have consequences in Veilguard. (his romance is locked to female elf)
otherwise, race matters way less in DAI than in DAO, so you can basically go with what you enjoy aesthetically. (just note that dwarves obviously still can't be mages)
people say that DAI's story seems like it was mainly written for a human noble of andrastian faith - so if you want the true "hero" experience, i'd go with that (and maybe romance Cassandra or Cullen, depending on which way you swing).
regarding class, in DAI it's truly just a matter of taste. basically: do you want to be DPS or tank? mage and rogue are DPS, warriors, especially shield+sword, are tanks. no matter what you pick, the skilltrees aren't complicated and you can get an item to respec so go nuts. i personally like a lightning mage because i enjoy the sound effects and the VFX lol

you could also always pick a class depending on what other permanent party members you want to take - like, if you want morrigan and wynne in your party, you probably shouldn't also play a mage, you'll need a rogue and a warrior. this goes for DA2 and DAI as well, but to a lesser extent.
For DA2, I really enjoy the 2 handed warrior build, but what makes the most sense storywise is playing as a mage, IMO. Even though you get stuck with Carver and not Bethany, so that is annoying...
For DAI, shouldn't be a surprise, I love the 2 handed warrior. Did it with a human and qunari warrior. Have tried the mage, but I did not enjoy it as much. It would make most sense to go for the female elf mage and romance solas to get the bigger impact on the story though. I just really dislike the female elf models in the that game, so I haven't been able to finish a run as one...
