Character customization?
how deep is it?

It's pretty good. I enjoy it a lot. Pretty good facial/hair cusomization (and of course there are plenty of mods to add more options). 3 races, Humans, Dwarves and Elves. Then various backrounds; Human: Noble. Elf: Wood Elf, City Elf. Dwarve: Royal, Commoner. Then there is a Magi background for mage classes, regardless of race. Then in game there is a good list of specializations for your classes (of course with mods you can add more).

I would say I enjoyed the customization over a lot of other games that have been released since then.
It depends on how you look at it. If you are talking about the first character creation and how your character looks, it is not as deep as Skyrim but also not as shallow as Fallout. If you are talking about armours, weapons and skills, then you have a lot of options in the game. As for the story, even though you are following the same main story, you might end up with different outcomes in each of your playthroughs.
