I bought this game on GOG and it doesn't require the EA app. Buying this on GOG has no DRM.

There is a Wabbajack collection of mods that only works with Steam version, that's why i wanna buy it here

You can use steamless to remove the built-in steam drm in the DAorigins.exe file and then you can it launch the exe directly from the folder or via shortcut without steam running.

(you have to run steamless on it anyway to decrypt it and successfully use the 4gb patch)

So is it a yes or no - for the steam version? Does it use Origin/ EA Play? I'm aware GOG is DRM free.

No, the Steam version doesn't require the EA app.

However, the steam version's exe is encrypted with steamstub drm which will prevent the 4gb patch from working properly but it can be removed with the app I linked above -- which is what mods like the one below have done:
