I don´t know if any straightforward way for splitting stacks exists, but you can go to a trader. If you sell the stack, it's automatically splitted (works only with potions/scrolls). The individual items will be preserved in the trader's inventory at least until you leave the city/village (and in this time you can buy the items back for the same price you sold it). So if you need, you can walk between Arcanist (for example) and Caravan Rider and through this way you will be able to manage the stack.
