If not go with highland. Highland gives you a lot of stone and iron space, and you get a defensive bonus for your castle as well. I like to throw banquets and always use my highlands villages to make the metal goblets since they take iron. You can still make a ton of pitch in a highlands village if you set up the pitch rigs right and do some research like you would for wood and stone. Marsh does give you a 20% bonus when you are making catapults.

It all depends on how much total pitch you will need over the entire game. Are you the only person in your group going to be making pitch? Do you need to build all the pitch upgrades in your parish?? Are you planning on using oil pots and smelters in all of your castles?? Are you going to use your oil pots every time an AI castle attacks you?? Are you planning on trading pitch in daily to make your gold???
Your question asks what has better long term uses. The answer is what are you going to use your pitch for?? How much do you need for the entire game?? Are you only going to have 1 highland or 1 marsh village??? to make all of your pitch??? If you make a marsh village it pretty much only makes pitch and that is it.
Keep in mind every player can have between 1 and 40 villages, that means 1 and 40 castles.

Marsh is for making Cats because of the bonus and selling off pitch in your safe zone.
I have more HIghland than Marsh.
