There are more stuff one could say about popularity, but to cut the long story short - if you have food in your granary, you will have workers as well. Well, mostly - as there are other factors that effect popularity as well!
Have you played tutorial to learn those basics?

This is interesting, I hope it's not some bug, or something like that. You say you do have peasants around the campfire... Have you checked if those peasants can reach their workplaces? You can try and send your lord to the same place where the farms are - maybe they can't get there.
Sorry, if I am asking stupid question though. :)
If you are certain that you have peasants around the campfire, and that they can reach those farms, maybe you could check your game integrity using Steam client. I haven't done that before, but I am sure you could google how to do that.
Does this happen on all free build maps, or this is about one specific map? Maybe you could also send me your savegame file. You may try to upload it to google drive, or something like that, and give me the link. You may also contact me by personal message, so I could give you my email address.
I could also suggest you asking this question at Stronghold Nation forum, there are more experienced people than I am; but of course, this could be something simple we could solve here as well. :)
