Anyway to level up in Combat Trials without PvP?
I'm going against people that are waaaaay better than me, I've won about two games of combat trials and I'm level 7 now. I keep losing and I don't have any good moves. Can I level up in Combat Trials via PvE?

No. Combat Trials are PvP-exclusive. At least for now. I've requested (and seen others request) some form of co-op combat trial mode, so in future if the devs do run with that request, there might be something there. But as of now, you just need to practise. You do gain CT level points even on a loss though, and learning from defeat means you'll get stronger as a player and be more likely to win the next match.

If you aren't satisfied with the moves you have available to you, you can learn tons of moves from fighting npc's, or you can learn them from other players. I think we fought once a few days ago, one thing I would recommend for you is to add more horizontals in your deck, you only had 2 or maybe 3 horizontals at most, with the rest being straights which are really easy to avoid as a Windfall.

Yeah, I had a friend invite me to his school and it's been nice from there on out.
