Upgrading Towns/Cities
I am struggling to figure out what the prerequisetes are for upgrading towns/cities. Is is a time thing or is there something you can do to speed up the process?

Its based upon population sizes and by building argricultural builds and lowering taxes, you grow your population at an increased rate. You can see this information in the Settlement summary.

Also a very valuable tip. The AI builds the farms completely. Don't bother with upgrading your farms untill you reach a negative growth (which shouldn't happen with decent management.) To much growth causes squalor and there is little you can do about it (other then exterminating the populace) and even with no farm upgrades and very high tax it's possible to have a growth of 2,5% per turn. Till your general dies that is.

You can hover over the town populace within the settlemtn summary to see how much you'll need to upgrade your walls.
I think it goes along the line of cities; 800 - 1600 - 4000 - 12000 - 24000
and castles are 1500 - 3000 - 4500 - 9000 and it says 18000 but there's no upgrade for that.

Certain other buildings (e.g. bimaristans and high level religous buildings), and governor abilities (e.g. chivalry points) make a difference to population growth, too.

Depends if you want to make a settlement grow faster or not.

True, thus no or negative growth :)
