Also, anyone should be able to figure out that if fighting them in the field wouldn't work, then the logical thing would be to take chokepoints, rivers or castles/cities as the best place to fight.
Also, if you can take over Europe by the time they arrive, something tells me you should increase difficulty (or stop using console commands).
You've seen it yourself, you got crushed by the Timurids.
Best is to take them on in a place where they can be funneled. So bridges/castles and have a ton of archers, better are crossbows. Then focus the elephants so they run amok and take out the enemy.
Shoot them shoot them shoot them shoot them shoot them to Death. Whether using gunpowder artillery (which is probably the ideal solution), muskets, or archers, you really do need to whittle down their mounted ranged units and keep your own ranged units protected while doing so.
As the others have said, they are strong in field battles and weaker in sieges or when attacking strong positions. Use that to your advantage. Try and get it so they can only attack with a fraction of their force at any given time,s o you can defeat them in detail. Like if they're trying to go through a gate or breach in the wall.
