The Papal States, Rebels, Mongols, Timurids AND Aztecs are unplayable in the grand campaign. One can play with the Papal States and Rebels upon placing them in the playeable factions in the descr_strat. However, doing so with the Mongols, Timurids and Aztecs causes the game to crash.
One could try to alter the starting date to 1 year after the Mongol Invasion and then try to play as the Mongols, I however, haven't attempted this.
The easiest way to play with the Mongols, or the Golden Horde, is to get Stainless Steel 6.4 (requires Kingdoms) and start a campaign there. However, this is a vastly different campaign with more lands, factions and mechanics. Which, judging by the hours you've played this game, is something I strongly advice against doing so.
Also, moddb is your friend for Stainless Steel.
It's not too bad setting them up in Teutonic to be playable. The only serious problem I ran into was not being able to create imams. You can always surround-squish enemy priests and heretics though :) I changed the religious status of the starting area to be more reasonable, 50% islam instead of 0%
