Bodyguard units will auto-replenish up to the maximum number dictated by your General's traits/ancillaries, or more accurately the amount of Personal security/Authority they have. They can also be manually retrained in a city/castle under the same rule as normal units.
Bear in mind that there exists two separate functions for retraining. Primary function would be replenishment, the secondary function is to apply armor upgrades where applicable.
On the city/castle menu, you can find a building browser button that will give an overview of buildings and what they produce. Some buildings/units might be gated behind historical events and won't become apparent until that comes to pass.
