It really is the most satifying faction to play as though, in my opinion. I like the set up of being a brand new kingdom (in the early campaign) and its up to you to build it up and make it stable in a far away place. There is some risk of a two front war with the Seljuks and Fatimids, but in my experience if you have enough units in your border states with both of them and build a decent navy, they tend to keep their distance and you can usually start the war on your own terms one at a time.
Theres nothing more satisfying than crashing your knights into their laughable light infantry. Plus, you get to hear the combat track from Medeival 1 in battles, which was always my favorite music in a total war game.
Not to mention major Kingdom of Heaven vibes.
