As the Turks as long as you have an Imam with 3 (maybe 4) ranks (can not remember exactly how many) then you get the option to Jihad Cities every ten Turns (not including the turns the Jihad is active) eg if you complete a Jihad on turn 15 then you can call another on turn 25.
The Jihad army whilst it is on has no upkeep costs so you can make it as big as you like. Plan the next Jihad target straight after the last you have ten turns to prepare. Inbetween Jihads take the lesser rebel cities nearby not on the Jihad list. Remember to disband costly mercenary units after the Jihad ends as then they do have upkeep costs. Turks initial problem is economic until you have a good amount of cities.
Use this to get choice cities like Constantinople and many of the rebel cities in the Holy land, personally I concentrate on the Byzantines and get them out of the way quick but also as a second condsideration keep the Egyptians from gaining to much as you can not Jihad them.
Nod. You still get frustrating Byzantine attacks and if you get Constantinolpe early expect Crusades against you so keep it relatively well defended (or train up assassins to pounce on crusading armies). Edited in a few things to my original post.
Do keep in mind, that you will need to turn all generals on and off the jihad in order to make sure you're not getting desertion.

Knock out the byzantines and spread along the coast. Fortify the east in preparation for the Mongols. Egypt and North-Africa are great conquests because they're profitable and easy to defend.
