New campaign with Spain, any advice?
I started a new campaign with Spain. This is my first campaign in this game. Are there any tips to play with Spain? I need to attack Moors at Cordoba, is my turn 40 and I only got Valencia and Zaragoza, but Moors have strange alliances: Portugal and Papal States? and I wonder if attacking Moors would make Portugal and Papal States as enemies.

yep, you'd get enemies. just ♥♥♥♥♥♥♥ kill them tho. Portugal has 2 settlements, the pope is too far away to harm ya, and you can beat the moors easily
Just unite North Spain taking rebel and Portugal settlements and ignore the Pope. Worse case scenario, he calls a Crusade on you. But that is no problem. The Ai is so dumb they can not put an army on a boat and invade by sea so their only route will be over land which will be through Southern France, which narrows down enemy armies from France and Milan as the closest enemies.England and Scotland cant sail down to Spain, HRE will be fighting WWII 1,000 years earlier, Poland and Hungary and way far away, and Venice tends to go east and fight the HRE. Sicily never goes north. So just garrison the northeast castle, Zaragoza I think, to defend Spain. The rest of your troops can be sent to fight the Moores which might make the Pope happy or else build your economy through conquest.

Fortunately, nothing happened with Papal States but I have a problem, I don't know how to join a crusade so this is the second crusade I fail. How to join a crusade?
General's profile bottom right corner. You have to have like 8-10 units with him before you can join
8 units in army to join.

For what reason the units with de crusader's general always desert?

That happens when you don't travel fast enough to the target city of the Crusade. Try to make sure you always move in a straight line towards the city to reduce the chances of desertion happening. However if the distance is too big you may still lose some units unfortunately. You can try to buy some cheap crusader mercenaries to replenish your ranks if it happens. I know it sucks but it's an historically accurate thing.

How can Spain be your first campaign?
Because it is one of the factions unlocked by default.

I messed the campaign because of the Plague. I don't know why, my economy resources dropped to -6000. I will start again because I think I had too many units and I couldn't maintain them. Any advice to face the Plague?

When plague hits your trade goes out of the window. So you had too many troops probably sitting on their behinds.

Spain is quite hard, but I assume your play on a rather easy difficulty. If you play in Very Hard you will get invaded from the sea by 5 different factions. England is the best faction for learning.

40 turns and just 2 regions? I dont think strategy games is your calling lol, maybe you should just restart at this point. Next time try to ally Portugal and wipe out Moors. The pope wont force you to peace which is always comfortable. Your plan should be to simply take the entire south west of the map, then expand into France or Sicily once you have consolidated.

Early game, the first 10 turns, are the most vital of any campaign. Do not remain static, especially on harder difficulty the AI will outproduce you, so early game is when you are at your strongest and they are at their weakest, so take full advantage of it.
