If you don't do any challenges, the strongest god you can go for is also around P.Baal V125, with challenges you can increase that to well above V 200. And with weak god power, challenge and RTI stats you might need months to be able to beat V125 a rebirth while you can do it within minutes if you have good other stats.
You want GP purchased stats (primarily you want clones but you also want creation speed bonus, build speed bonus, and create count) and you want challenge rewards and you want various other things like total might and total pet growth and crystal power and light clones and RTI perm levels. Progress in pet dungeons is a whole thing as well. The pets can gain some growth in the dungeons and they can also get materials that can be used to craft gear. And you gain a few bonuses to your stats based on all of your pets' gear.
Getting stronger in things like that can make your future P.Baal climbs go much faster / smoother compared to when you had less progress in the game. I'm somewhere around what might be called "midgame" (maybe late midgame to early lategame just going by ChP? I have 17.9k ChP, but I only have half of my UBCs done and that's an important set to finish to really get out of the midgame) and my highest god ever beat is P.Baal 100 (that might have taken me 2-3 weeks to climb to that), my high score in a DBC is P.Baal 60 (so that's how far I climbed in just one day), and my high score in a RTI challenge is P.Baal 80 (so that's how far I climbed in a full week).
Challenges should be unlocked for you since you have beaten Baal at least once before. You can see them from the rebirth tab (since a challenge is effectively rebirthing and having special conditions applied to the next rebirth(s) until the challenge is finished). When you go to look at the challenges you'll see a few categories like "normal", "reset multi", and "reset GP". Normal challenges start you off the same as a normal rebirth. You'll have rebirth multis as strong as what the rebirth tab shows for your next life. Reset multi challenges simulate a start as if you had quickly rebirthed twice in a row, which means that your rebirth multis are effectively erased. (They will not be returned to you. You'll just have whatever new multis you earned within the challenge.) Reset GP challenges reset your rebirth multis and then on top of that they also temporarily seal away your GP and your GP purchases.
Some common suggestions for your first few challenges (check though whether you did any of them already before you stopped playing? statistics -> challenges) include a Day Pet Challenge (even with a crap score you can get a decent bonus to start with and all pet feedings will be worth more growth gains) and one run of the God Power Challenge (this unlocks a pet and ... I think one of the other early challenges gets unlocked as well? I forget which one) and one run of the Ultimate Baal Challenge (this will effectively be very similar to starting the whole game over again, although you will keep some things (there is a different challenge that's even more restrictive than that one), but there's a bonus reward for the first UBC that unlocks a feature in the game called the crystal factory (you may or may not be able to get much use out of it right away this early in the game but it's nice to have it available)). Beyond that the first set that really ought to be completed in full is the Double Rebirth Challenge (this is the most basic version of the reset multi challenges).

For the ultimate pet challenge you need to make your pets stronger to be able to win, so even if your god stats are as strong as P.Baal V5, if your pets can't beat the gods it does not help at all. First you would need to feed your pets so they have any power at all and then you can increase their power through item campaigns.
And my Kong save was even older...didn't have the issue there either. I can't remember what my multipliers or anything were. I SWEAR I saved a screeny but I can't find it :(
