That thread should have all of the steps needed to finish the undine "quest".

Long story short, it requires a fairly massive amount of tier 2 materials and quite a bit of time, and you will want to have a training sword (preferably tier 2 or 3 and a high grade one for faster results).

You only need 1 level up for Undine to have more than 0 HP, so one overnight Water Temple with my main party with a +0 training sword on Undine was all it took to get her a shadow essence. After that she can join in on dungeons for levels.
