I personally still don't have a single defender yet (elephant is on his way but he is still lacking 171 defense with a steel armour A +9 so not quite there yet), so I had to compensate with equipment and levels, but if your team doesn't have a mage it might not be a bad pick (I mean, there is a reason why the whole ambush thing was added in order to stop mages from wreaking absolutely everything, and they are still super strong).
Ape is harder to get, and much harder to evolve (to assassin), so dragon should be your best bet. From my point of view, unlocking and evolving the dragon is a better course of action than wasting a change token on something that will not be optimal. And an adventure boost is always useful on pet stones and growth in the long run, so camel shoud become an adventurer, not a dungeon pet. I would save the token for this, instead.
All that said, mage seems more useful than defenders. So if changing it, I would make the camel a mage. A mage AND a defender together, though, are awesome. So if you decide to unlock the dragon and make it a mage, making the camel a defender is a better idea. My 2 cents.
