As for the audio fading, I'm not sure what you mean exactly. If you could provide an example that would be nice. It may just be an emulation quirk.

With the music fading out after a minute, I think that is entirely by design. Arcades could get pretty loud back then. It's why you see some games with the option of turning off attract audio. With the guitar track, I think the "Killer Instinct" voice is interupting the playback which could either be a bug with the game or with MAME itself. I don't know.
I'll give Killer Instinct 2 a quick look to see what you're describing.
In short, I really think this is just how the games were programmed. I don't think anything can be done.
I let KI2 play for a bit in a standalone MAME install. I didn't notice anything out of the ordinary. Could you perhaps give me the amount of time it takes until the sound goes quiet? I'm going to try it in NRA:N and see if it happens when I get a chance.
