You have to setup your own games unless you download someone elses setup online. Can't give any links to them though.

As for adjusting your graphical options, you can find a MENU cabinet in the arcade that will allow you to adjust your settings. It is the same cabinet that you should see when you first load into the arcade and when you press ESC, you actually teleport to it. You can also quit the game through this cabinet. it seems complicated. Is there anyway to use the cinema just from in game, like putting in youtube links or something? I'm to much of a causal player to get into all that stuff...

You can assign a Youtube URL (or local file) to each VHS tape and you can then switch between the different tapes in-game. You can, however, not enter new URLs from within the game if that's what you're asking.
This is one of the worst parts of this setup. It should let you assign in game if something isn't already assigned. The entire game is so unintuitive and the guide is not beginner friendly at all.
Yes, i wish it would just let me use the cinema as if it were a web browser, the same way Tabletop Simulator works!
with respect, i think for a lot of people buying this game (me included) was expecting an experience fully self contained. The game is great, but for the causal player setting up all the arcades and movies and stuff is a bit too much effort for what its worth.
Theres only 1 thing that i would love to see, and that would be a built in web browser in the cinema. You can still have the VHS tapes for that vintage experience, but also allow for easy browsing on youtube and stuff for a more practical experience with friends. Tabletop sim, and garry's mod Cinema do it very well.
