How does that very strong attack work with the long animation? I forgot how to pull that off since I played the game a decade ago.
I remember how to thrust and swipe, but forgot that move... as I remember it was hard to pull off.
Im replaying this game again after like 10 years I think and it's still just as awesome.
The first time I played it I didn't really understand strategy and all the tools I could use to play as efficiently as possible, especially in combat situations like the one you describe in your question.
Defeating the mounted knights is def one of the hardest parts of the game.
But with some patience and a lot of quick saves I've found the best strategy to beat them without taking damage.
It goes without saying that in the convoy missions you should just draw the knight into the net trap thing and shoot an arrow. Its quite easy but you have to time it right.
The hard part is facing them in missions where you have no option but to fight them head on and kill them.
So, first of all, always try and attack them when they are not looking. Having the element of surprise ensures that they won't be able to charge you ( which is a big part of how they deal damage). So if possible sneak up on them and attack so they can't run away/towards you.
You will need 2-3 members of your squad to pull this off.
I usually use robin, the big galoot with the club, and will scarlet/the other Archer guy.
Set them inside a house nearby close enough to the path of the knight.
Now plan a 'quick attack' on the knight(the square icon in the bottom right corner of your screen) with the club guy going first, then will scarlet and then then send robin by controlling him directly.
Why do this rather then just select all 3 and attack at once?
Because you can then surround the knight and use shortcut keys to switch between characters( which you should already have set up in your settings) and this way you dont risk knocking your fellow comrades out which so often happens when you use complex attacks.
You don't really need to use any fancy attacks. Just simple straight thrusts should get the job done. Oh and don't forget to defend (right click) whenever necessary.
I used this technique against the knights in the silver arrow mission and it worked like a charm.
Play around with it and see what works best for you.

First you dodge his charge and wait for him to stop and click attack him when he's stand still.That just enough because character will go straight to him and ask him to ready his weapon which will stop his movement even he is on charge mode and that's you chance to click attack him again which become a duel and then relied on your skill and plan.If you play on easy or medium mode,one on one with Will should be fine but if you are on hard mode you should have at least one character fight him on the other side to balance Will's stamina and pierce through Knight's guard because all enemy always guard on almost everytime you tried to attack him and he can counter you at instant and have a false attack to make you off guard too in hard mode and beware the attack that he swing his weapon and knock all your character surround him down.
If possible, I recommend you to avoid him as much as you can.
