As for the alt+tab, don't do that. It even says in the game's original readme to not do it. If you switch out of the application then the pre-rendered images won't load when you switch back to the game. If you switch screens, such as transition to a new camera angle, then everything will load again. But try not to do that if possible.
Another issue you may encounter is the anti-aliasing doesn't seem to work, or at least does a really bad job of it. So you will want to force the AA through your Nvidia control panel.
Another thing you might want to check is your Nvidia settings in general. I know a lot of people mess around with them but I try not to touch any graphics settings in the main system controls because it can cause a lot of issues with games. When I was forcing the AA for this game, I also decided to turn up a bunch of other settings for textures and stuff. Because this game uses basically images for most of it, changing the texture settings kinda messed with some of it. So if you've made any changes to your Nvidia control panel stuff, you might want to reset them for this game and see if that fixes anything.
When you first fired up the game, it should have prompted you with something about installing DirectPlay, at least it does for Windows 10. If it showed you that window, did you make sure to install that?
I'm not sure what else could possibly be causing just the buttons to be missing. I assume it has just black boxes where the buttons should be then. When you mouse over them, does it make a sound or can you even click on them?
Just download this file, copy to the C:\Program Files (x86)\Steam\steamapps\common\Syberia and replace the old one.
