Original Version of game NOT saving settings

I don't have the expansion(s) yet for SM and I don't think I will be buying them anytime soon as when I come to load my save game I have to reset the options for the display every time and it's getting annoying now.

Is there any way I can fix this issue - any help would be gratefully received.

That has nothing to do with the expansions. It sounds like its detecting something other than what you have as a display and attempting to correct it.
Check out your log file for any clues. It would be up at the top.
