First of all, no one is going to jail, I understand your struggle, I fought the same boss, it wasn't easy for sure.
I think it took around 3 rounds for me to finish her.. as I recall, you gotta throw those sticky bombs at her and blast it when u get the chance, you gotta use the cross blade for that. she'll eventually fall to the ground, then within this small window make sure you fight her before she takes off again (P.S - make sure you get away when she spreads her wings.) and then do the exact same thing, fight her when she drops to the ground and let her fly again, I think it takes around two rounds of that when u move to her second phase, when she fights you face to face.. the first time I fought her, I used the cross blade to fight from a distance- DONT!
It takes forever and barely does anything, I used my Scythe I bought from Vulgrim, it wasn't that expensive (I think around 5,000 souls) and it's really useful, it takes long powerful shots from a distance so I could avoid her attacks in time.
When you do hit her if it's with your Sword/Scythe, she will collapse maybe I think twice then again make sure you hit her when she's unconscious.
In the end, you'll pull her heart out and call it a day, again, this is not an easy boss I agree with that, but it will be worth it when u claim her heart.

I watched some videos and I understood that the best thing to do was keeping the SHIFT key pressed when she fell on the ground for the second time; this way she would never go out of sight and you could avoid her attacks easily. Then I started striking her with the flying blades (this only works when the SHIFT key is pressed, again, if I understood well) keeping some distance, trying to cause a "critical strike" (those that must be performed with the "E" key), and after each of those strikes I would run closer to her and hit her with the melee weapons. Then repeat.
It took some time, but I eventually made it. I had to do some settings to reduce the mouse sensitivity, but I still find this part unplayable. The player must press too many keys at the same time, with the pinkie almost constantly on the SHIFT key... This is very annoying in the second part of the fight, when there's only one enemy on the screen! Why couldn't the game focus on that one-and-only enemy on screen, instead of forcing the player to press that damned SHIFT key (with the pinkie finger!)? Not to mention the "bombs" part, where aiming is almost impossible (I can't count the times the bombs finished stuck on the columns, or just flew away!) and where you must stay very close to the enemy to aim it correctly... And if the enemy fires before your flying blade hits her, your blade just disappears and you must try again... This is what I call a bad game design. Or maybe I'm becoming old!
