First Boss battle
I haven't beaten the game yet but I was wondering if it is possible to defeat V In the first battle with him, where you get interrupted. Or is that whole sequence scripted?

It's scripted, but you can still "beat" him.

The result is scripted, but if you hit him from behind enough times, you get the Beatdown achievement.

I don't think so because When you're fighting a null typically there's some acknowledgement of them having precognition. V doesn't do any of that, but he does know what chronos does.
