hardmode?

I finished the game and everything but all I see is speed run mode I can't seem to find hard mode anywhere except for the option when you choose speed run. Is there no option to just do hard mode without speed running? Sorry for being dumb I googled the crap out of this can't find anything.

thanks a ton! makes sense just making sure I wasn't missing something. Can't wait for some DLC or a sequel this game was mind blowing to me and was a good samurai fix after beating sekiro about a dozen times over lol!
