The first 4 levels and the Dragon tape should be fairly easy to get a platinum medal after a little practice (0 deaths). After runs you can see what levels gave you the most trouble and practice those levels until you are comfortable for a full run.
"There isn't a specific answer to that, really. Every stage has its own medals associated with them (if you quit in the middle of a run, it'll show you the medals for the stages you have done, so that's a good way to gauge how well you did in one stage for practice). For example, getting even a few deaths on the first 2 stages will give you a pretty bad medal, while you can die a lot of times on some of the later stages and still make a gold.
I think the time for each stage is individually weighted too, but overall, aim for under 30 minutes for your entire run.
At the very end, the average of your medals determines your final medal score. If you have a lot of platinums for some stages and some silvers for others, you can still end with a gold overall. I don't know how exactly each stage is weighted towards the total, but yeah that's how it works. Note that there IS a medal above gold, which is get a gold time for that segment AND have 0 deaths.
That said it's fairly lenient buuuuuuuut it is tricky. Remember if you get stumped on an area there's a bunch of guides, and you can practice chapters individually (though for the achievement you still have to do the full run, getting a tough chapter down to consistently getting gold makes it easier)
