Stealth nearly impossible / how do you stop a convoy ?

So it seems like stealth is almost impossible in this game , they see you nearly instantly anywhere within 100 yards of them and they often stand together right in the open , when you enter , say , a mission area , guys pop up all over the place around you. And how the heck do you stop a convoy ? I tried mines out ahead of them for the first car , but when waiting , a bunch of random cars come by and blow them up , and the convoy is moving rather quickly and the guys are blasting away at you while they are moving.

BTW being a bit ahead of the convoy gives drone time to scan targets (spinny circle) as you can't give tag command while it's scanning.

aproach only from behind, with battle chopper with gattling gun... no survivors...

Tag convoy drivers as soon as they get within range of your drone.
As soon as the helo is within range, grenade launch him down, reload, first jeep, reload, second jeep, tell crew to free fire incase someone undesireable just drove up too. Go to hacienda for beer. Put it on my tab.

Easiest way to stop convoy is to get ahead, which can be tricky at times. Place 3-4 C4 explosives on the road, no mines that will only kill civilians. Wait for the truck and boom, never fails. Possibly some will magically survive the blasts but they're easily killed.

I normally use the explosive drone, fly it onto the road and when the first escort car has just driven over it, explode it between that car and the front of the truck. With practice that takes out the first escort and destroys the front wheels of the truck without destroying it.

Or... fly the explosive drone to the side of the road and detonate as the truck is halfway past, it can knock over the truck intact, onto it's side.
