You can make these for guns other than Shotgun, and they work well with the Assault type.
As for strategy, have a full party. I use Kota with Normal Bullet +L, since it often causes enemies to stagger. Just don't use Kanon. Keep in mind that SSS+ is only available for Solo runs, so you'll need to make a choice.
Hammer isn't too hard either, but you'll have to break the legs to do good damage since hitting their heads is too difficult with the hammer's awkward aerial attacks. Once you do though, it's easy.
If you're using cannon or shotgun, spam their legs. If you're using assault or sniper, aim for their head.
I find spear too difficult to attack their heads with due to their again awkward aerial attacks, and their legs are especially resistant to piercing. Scythe and Long Blade might be fine but I don't use those weapons much so I can't comment.
Oh, I nearly forgot: the absolute best weapon to use against chi-yous is the buster blade. The charge comes down vertically and they usually do crushing damage, so you can attack their legs or their heads as you please. Their aerial attack isn't too bad either.

A scythe of same rank to that sword could do similar DPS but cut a minute of time, break more parts and be overall more safe, if you really want to take your time for big damage a hammer would also offer more mobility and break more parts.
But for new people pierce bullets to the head is really the way to go, either with a bullet that auto aim or a manual that hits multiple times
