As for endless mode, the short version is that they will not do it.
The long version is that the developers are afraid that without the extra power from the items in the gnome shop, people will not get far into the endless stages because the enemies will be unbalanced, so it's not worth the effort to add in a bunch of levels which people will never even get to play. You can actually get very deep and experience all the content endless has to offer without gnome shop items if you're good at the game, but not enough people would be able to do that, the devs think. So after that, people offered many different suggestions for how they could implement it without putting microtransactions in the game(some of which actually made endless mode better than it is on mobile if you ask me, because it made it about skill instead of "how many items can I buy on this run"), but the developers decided that they were not satisfied with it.
I think most of us who bought the games on Steam and want the Steam version to be the very best version of the game are a bit disappointed that the endless stage from KR and the two endless stages from KR:F are missing, but there isn't much we can do about it as the developers have made it clear several times that it's not going to happen.
