Deleting Save Files

Dont get me wrong love love love this game but I wanted to start over without being leveled up or having saved files. I have deleted them from my computer, uninstalled and reinstalled the game and removed the entire steam console but the files are still on the game how is that even possible. Does anyone know how to start from scratch and remove the save files. Help

IIRC The saves the game are reading from are located in something like
C:\Users\Username\Documents\My Games\Dead Rising 2 Off The Record\saves
Check that directory.
