What universe does the saiyans of xenoverse from?
I like to think 6 since we have no tails xD

Xenoverse takes a LOT from DBOnline and DBHeroes. It can be assumed that the reason Saiyans don't have tails is because they're from a time similar to DBOnline, which didn't have Saiyans as a race; Saiyan blood has been passed down to the point that almost all Earthlings (or specifically, Humans) have some, which gives them increased strength and the capability to become a Super Saiyan (though it requires Shenron's help).

Other examples of taking from DBOnline mostly come from their ideas for the Majin race, even down to what created them (with the exclusion of Miss Buu, for unknown reasons). Even the Purification awakening was in DBOnline, which is unlocked with the help of Shenron. Furthermore DBOnline heavily suggests the Majin race lost the ability of absorption (as none have done it) and are no longer unaging.

Personally I would like them to take some more from DBHeroes when it comes to our own characters.
Edit: However Heroes doesn't have custom characters, but instead player avatars.

the CaC from XV1 was summoned by shenlong from another place not created and the time patroller in XV2 is just a new recruit

the timeline doesnt quite make sense if you account for the amount of saiyen players but thats beause people pick them. because resurection movie happens in age 779 and xenoverse 1 happens in age 850 which is 71 years after ressurection. this means that the population if they were to come from decendants of goku and vegeta and their kids all had kids in their 20s than they would probably be 4th or 5th generation of saiyens (1/8th or 1/16th saiyen). there wouldnt be a huge population of them but there would be a good ammount of them, just consider that xenoverse isnt made to be accurate in time patroller population.

Word has it that the next content update will provide Saiyans with optional tails... and Earthlings with Majins symbols for some reason lol

If you want a tail right now, the only way to do that is to equip stuff like Raditz's battle suit.

The translation actually messed up, the Majin emblem is for "Human-like" characters. So you can have it for Earthlings or Saiyans, but none of the others. Overall though, finally some accessories I'll use!

The Saiyans are from the future, and possibly from an alternate timeline. They are descendants of Goku and Vegeta, and lack tails due to Saiyan tails being a recessive gene that does not often express itself in Saiyans with mixed blood. Goku actually refers to the CaC Saiyan in Xenoverse 1 as, "A Saiyan from Earth." The Saiyans are definitely not pure-blooded Saiyans from another universe. Keep in mind that Super content didn't even exist until Xenoverse was well into development. The sequel was even nearly complete before the Universe 6 Saiyan Cabba was introduced in the show. So the concept of alternate universe Saiyans (who just happen to lack tails) did not exist in the lore yet.

Saiyan tails are not a 'recessive gene that does not often manifest in saiyans of mixed blood'. The only reason Goten, Trunks, and Pan (being the ONLY canon hybrids) do not have tails is because, as Toriyama himself has admitted in the past, the author forgot about the tails entirely.
Even then, we can simply make the statement that the tails were removed at birth, since the parents/siblings of all of these hybrids are aware of the danger of an uncontrolled oozaru, not to mention the threat of an untrained tail.

He didn't like the tail, so he stopped drawing it on Goku. Then he gave it to Gohan, Raditz, Nappa, and Vegeta, before those tails disappeared too. Then he forgot to draw them on Goten and Trunks. There is, however, an explanation given for why Trunks and Goten lack tails, and I'm fairly certain it came from Toriyama in an interview, or at least in the guidebook that fans use as the gold standard of Dragon Ball lore. Most half-breeds simply don't have tails because the tail gene is not expressed.

I have an feeling that these saiyans are from a alternative time-line of Universe 7 where their planet wasn't destroyed, that leading to a actual population of Saiyans and Frost Demons still being alive.

Lol wut, none of that is implied in the story, it's just the future. XV2 takes place in Age 852, planet Vegeta is destroyed in Age 737. We're safeguarding history as part of the Timepatrol, so obviously we're still part of the DB timeline.
