Consider: you don't need PQs to do Hero Colosseum. You don't need the roster unlocked for that either, but it bothers you anyway, as you said.
Fastest way I can think of for a solo act is always bring AI teammates (I recommend Adult Gohan, Goku, Vegeta, Cooler, or if you have the DLC, Tapion), a blast focused character, and an easy to spam, reliable super or ult (something that hits hard with decent tracking and doesn't need any setup). Try to get the AI teammates to tank for you, then just drop supernovas or whatever on the enemy. Rinse and repeat for most of them.
But even then there's no way around the fact that if you view it as an absolute chore, it's going to be one no matter what. The tactic I recommended is as quick as I can think of, but it won't make it any more fun or less tedious.
In the end you either push through the tedium, or consider playing a game you enjoy more. Yeah, you might tell yourself there are still parts of this game you enjoy, but if it gives you displeasure more often than not, you really should ask yourself if it's worth it or if there are better ways to be spending your time.
I say this as someone who's been in your shoes (albiet with other games) only to realize much too late I should have walked away sooner. So believe me, I totally get and sympathize where you're coming from.
Re-spec your char to be a Ki Blaster, i.e. +125 Ki Blasts, +5 Ki Blasts on QQ Bang and a favorable Super Soul would also be nice to add (Beerus' "Before creation comes ruin" comes to mind).
Equip the following skills:
Supers: Maximum Charge or Divinity Unleashed, Perfect Shot
Evasive: Angry Shout
Blast through the entirety of PQs by only folowing this pattern:
1. Dash towards opponent
2. Out of the dash, light hit the opponent
3. After the light hit stuns them a little, use manual knockback (Heavy Hit + Grab buttons)
4. After the knockback, use Perfect Shot
5. Repeat steps 1-4 over and over
(Perfect Shot is the most efficient skill in the game, even during stamina breaks; throwing out Ultimates will take longer and be less efficient... if you really feel the need to do something else than Perfect Shot, use a fully charged "Sledgehammer" Super after a stamina break, then immediately follow up with a "Super Spirit Bomb" Super, but then go back to using Perfect Shot again...)
I think I will just do as you guys have advised me the most so far and that is continue grinding them offline. Maybe if I do a set of like... 5 or 6 each day, it will feel like less of a chore. Do this for a bit with your tips in mind to speed it up, then switch to a different game, until I'm done.
The ki-based character is indeed something I thought of as well. The annoying thing is that the first character I HAVE finished all PQs with, is a ki-based Frieza race and the one I'm trying to get over this hurdle with now (I've done more mentor and other thing with this character), is a strike-oriented female Saiyan.

Use Dragonballs to respec her to a Ki Blaster, then do the PQs. Doing those you'll probably be close to having collected another set of Dragonballs, so you can go back to being a Striker afterwards.
Beerus' "Before creation..." bonus to Ki Blast Supers is the exact same (XL) as Babidi's "I'll make good use..." bonus to all attacks, so - following my advice - your main source of damage, i.e. Perfect Shot, would get the same bonus for both. Super Vegeta 2 gives a slightly higher bonus to Ki Blast Supers than Potential Unleashed though. Also, the additional damage bonus of Babidi's Soul will really onle affect light hits + knockbacks, whose damage is negligible either way. Especially as a Saiyan, Big Bang Kamehameha is worth being mentioned... it really only shines because of Super Saiyan teleport though, so losing that is a big no-no :)
You would use Goku's "I hope you're reborn as someone good" on most multi-opponent missions anyway due to its great effect of filling your Ki after each kill.
