You can change the color of plates and most of the other components too, in the ship designer and out there too if you buy a paint tool and some paints.
Ship designer allows you to change the stats of your ship components too, on your own designs later on when you gain other types of ore. You can literally choose the components on your ship and change the ore they're made of, this affects both the durability and the weight of the component.
i havn't dipped much into the ship builder yet. still tinkering on my modulus as a learning process before i try something crazy and it doesnt end up working.
If you want a purely decorative plate, you can use Ajatite - its significanlty lighter, but structurally weak. For decent armor, use Charodium plates.
Most components with a function can be painted, but only a specific area on the component changes color.
