Just a hint: for Steam you don't need DS4Windows at all. Steam has an inbuild xbox cntroller emulator. Just activate the PCA and it does the very same as DS4Windows does. You can also rebind your keys if you want to if you SHIFT+TAB during game and go to the controller setup from there.
This is why I just flag my games I played with controller mit "PCA" and "NO PCA" category as soon as I found out in which setup the controller worked (best). So I just can look it up for the next time I play the game :)

I don't know what PCA is and how to access it
I play most of my games with DS4Windows as it tells me about my battery life as well as having my controller work with many games (as most of them don't work without it)
I play using bluetooth and not connected. . .
Sadly I don't know what PCA, I closing DS4Windows as well as disabling Playstation Config on Steam Big Picture and nothing still, It still works with my Home button but that's it, maybe I'm missing the "Mark the game as NO PCA"

But I really don't know if Steam will recognize a wirless PS4 controller without DS4Windows, never checked because I play always connected (I hate battery powered devices. Just a personal matter :) ). I can at least ensure you that if you don't use DS4Windows and play non-wireless, with PCA deactivated, your PS4 controller works with this game.

First off, I don't find any of those settings you speak of. Though I have the german Steam client, they should be there.
But neithertheless I don't have any specific settings in Steam for this game, nor the general settings in Steam. I just throw the PS4 config support checkbox if necessary (if a game does not recognize my controller I turn it on, else I turn it off).
I just rechecked it, it seems that this game does work with and without the PS4 config support. Steam does reconize my PS4 Dualshock in the settings and the game does use it straight away loading the appropriate profile. Keybindings are ok. Everything where it should be to access quickely. Seems that Steam is loading a keybinding setting from game Atelier themself which works fine for me.
I have 3 PS4 controller here (all the wirless version), with everyone it runs fine via USB cable.
Did you closed DS4Windows completely? Even any TSR service in the background?
Steam actually recognizes my controller as "Playstation 4 Controller: Playstation 4 Controller" exactly like in the above linked screenshot. If yours are not recognized this way, something is still "masking" your controller somehow which may hinder the game to load the appropriate profile.
Yes, it did recognize it as a PS4 Controller when I had DS4Windows closed
When I had DS4Windows open it recognized it as an Xbox Controller, still nothing, nothing works and there's no way my controller connects without Bluetooth, I have to use bluetooth for it to connect (It's an Original PS4 Controller) as I found the only way to connect it to PC it's with a Bluetooth adapter
I have 3 original Dualshock 4 Playstaion 4 controllers. And they do work all with USB without any issues. Windows 10 gamecontroller setup is even recognizing them as "Wireless Controller" via DirectInput - which does not work for most games as they want to use the XInput mode. That is the reason why you need a game with native support, or have to bypass a missing native support with the Steam PS4 config support or third party software to make usable for some games.
I think, on this game, Bluetooth does not work with this controller (for any reason we just don't know) and as long as you have problem connecting the controller via USB cable diretly Steam does not properly can use it.
It is sad to hear that you have such troubles as my controllers work so well with this game.
