Can you try the workaround here? If it does not help, please make sure to contact Nvidia Support.
https://forums.geforce.com/default/topic/807663/geforce-drivers/control-panel-forgets-settings/post/4444171/#4444171
Download Nvidia profile inspector.
Open it
Click the tool icon next to "Driver Version"
Search for Watch dogs 2 in the "Profiles"
Under "other", there is a settingID called "Do not display this profile in the Control Panel"
Change the setting value to "CPL_HIDDEN_PROFILE_ENABLED". (it's in the dropdown menu)
Now you should be able to edit the settings in control panel
Someone get this man a medal - this has helped me with my fresh Watch Dogs 2 install from yesterday.
Glad to hear the suggestion from TDI GO WROOM has resolved the issue for some of you. Hope it is found to help anyone else coming across this thread too, so thanks for sharing it :)

Thank you for your update.
For full clarity would it be possible to share a an image of exactly where you are looking?
Many thanks,
