First off I have a g920 so my advice may not be completely relevant as I don't have first hand experience with the 27.
Is it your camera spinning or are you physically moving?
One thing to try is connecting the controller, enableing it and then going through the options deleteing all the controls bound to it. Then go back and add controls slowly testing what happens each time (similar to finding which mods are conflicting). Sounds as if something is out/double bound.
Also just to check you have LGS installed and setup? Failing rebinding in game you could use the software to configure a profile for fs and see if that helps.

So if I want to use just a mouse and keyboard I could select controller profile A. If I want to use my Xbox controller, I could select profile B, wheel profile C. Or even a combination of wheel and Xbox controller could be profile D. Any profile should be pickable for the same game save.
As far as your spinning, you could have one of the pedals set to pan the view. I believe that is what I had as well. I think it was set to my clutch. If I held the clutch half way down, it would stop spinning. If I pushed it all the way down, it would spin the other way. You just have to change that option in the controller settings.
That makes sense. I had that once with a different game where the camera bound itself to my joystick throttle. That sounds like your best bet for the problem.
