After it's planted, crop needs correct temperature to start growing.
In short, you're right.
ever seen a canola field in winter? it looks like some weird cabbage.
How many days per season are you playing - 3, 6, 9 etc. - the fewer days you have the harder it will be - this is because if you have it set to 3 days, you might actually have bad weather for those 3 days - e.g. rain, so you can't harvest, where with 9 days, you might get a good day to harvest the crop - I guess the same for ground temperature too.
Also any GEO mod you might have will affect it - e.g. the Wales GEO mod I guess there will be a lot of rain (known for it in Wales), The Seasons Mod weather pattern is set in the south of England so don't expect sunshine 24/7.
