If it had been left to a major AAA studio then I think it is very unlikely that either of these game/sims would ever have happened.
Even in the Flight sim market, there was only one sim for a very long time and Microsoft abandoned that market - fairly typical of Microsoft but a subject for another day. The flight sim had one huge advantage over the more casual PC sim market and that is just enough flight simmers have lots of money for their hobby.
Both ETS2 and FS had to appeal to a wider and more casual market but also because it has been really niche, it also meant these game studios had to be committed for a very long time and with a small but dedicated user base.
Just imagine if either GIANTS or SCS had the money that Rockstar can spend on GTA, or even something like Elite Dangerous, I think a farming or truck (or sadly missing from your list a good bus sim) would be amazing. Maybe one day...
The tractors are modelled on real tractors and with real physics of land and seasons with mods. The Fiat Agri even has a tractor enter animation (Shift+Enter). The Interactive Control that does exist is great but with the "Activate" key intrusion feels like it's fudged in because to serve a need of users that Giants aren't listening to.
Perhaps I'm just expecting a simulation game to be on par with existing simulator games. After all don't you learn by example.
