Windows 11 Home (AMD 7800X3D + RTX 4060 + 32GB RAM)
This seemed to have fixed it.
I'm currently running the game without any crashes and I only enabled/turned on VSync inside of the game (all my compatibility settings are set to default and switched off/completely untouched).

For people having trouble with the game crashing while attempting to play certain specific tracks (do this):
1) Go to "Library"
2) Press/open "GRID 2" library page (inside your "Library" section: either in the "Home" section/tab of the "Library" or in the left/side menu)
3) Click the "Manage" wheel/option
4) Go to "Manage"
5) Click "Browse local files"
6) Locate the game executables for GRID 2 (grid2.exe and grid2_avx.exe)
7) Select/right click each executable and open "Properties"
8) Click the "Compatibility" tab
9) Click "Change settings for all users"
10) Under "Compatibility mode" enable the option "Run this program in compatibility mode for:"
11) From the drop-down list, select "Windows 7", press apply/OK
12) Press apply/OK (for both programs/executables)
That's it.
After that I think it won't crash again (at least it didn't for me).

IMPORTANT TIP:
It's important to get the game executables back to normal (and also let Steam verify the integrity of your files), after you play those tracks that were crashing.
WARNING:
Using this might not be a good idea if you're not a good tech guy/girl, be compatibility mode might be "unstable".
I'd much rather let the game crash when it wants to, rather getting stuck in blank/black screen that just happened now.
AFTER FURTHER TESTING:
I find that this solution is NOT "stable" and it's only a temporarily solution for those of you that cannot play specific tracks otherwise (it's recommended for you to revert your changes afterwards).
