How do you do Jedi mission?
As it is stated.

Jedi training?

You click on Darth Vader ( or Luke) and all the force sensitive people and then the location and the mission "Jedi training" will be available.

Unless.. Luke hasn't reached the Black outfit stage, he can't train people until after he reached the phase that he is all in black.

Who are force sensitive and how do you find them?

Each game is different, the Empire is the easiest to determine.

Bring all characters into the presence of Darth Vader for a day, you will get a message IF someone is force sensitive, those can be trained to be Jedi (can go on a Jedi training mission)

For Rebels, after Luke returns from Dagobah, he starts being able to sense force sensitive characters (bring them to the same planet) and after he starts wearing the Black suit, then he can start training them

Close. Luke needs Jedi Knight ranking, so the easiest way to get him there is put him on a fleet, send him to empire planets with no troops and have him sabotage literally everything on the planet until it has nothing left. Rinse and repeat until his combat/espionage scores are around 400 and have him start going after troops.

He will ONLY grow in the force when he has some form of opposition from troops. And it is perfectly ok if he fails, because every message you get that he grows brings him closer to knight/master. And each time he ranks up his scores get a boost

It does, but you also have to remember that between the very start of a game and day 300 or so most systems are open and clear. After the 300 mark he will go see yoda for a while. So the first 300 days toss Luke on a corvette and send him to a core system you have no intention of even trying to make yours (corillian or the one below it) and have him clear out neutral planets. His scores will go up with every thing he destroys, there will be no risk to him (he just wont gain force points) and the hilarious thing is when the empire takes those worlds they never rebuild anything on them.

By the time he goes off to train yoda its possible to clear 2 entire systems that way and get his scores into the mid 300s. By the time he comes back its going to be almost impossible for him to be captured because he has special bonuses to escapes. Hes a cheat character
