If you want instant Jason action then either start at Part II or Part III. But if you want a bigger grasp of the story and are okay with Jason not being the killer then start with the Original. I warn you though some things won't make sense. Also the films get Really silly when you get to Part VIII
Just watch them in release order, taking account the spin-offs.
just cause they were made in the 80s doesn't mean they suck(they have color), hell i've watched those black and white movies made in 60s-70s for a english class paper and they actually were interesting!

I've seen them all several times and own all of movies in hard copy form, but maybe I'm just partial to these movies, because I was an 80's kid and grew up with these movies, and they never failed to make me turn on all the lights after watching one. That was the feeling that I look back on now and what was enjoyable about them.
And not only those movies, but the original Halloween movies, and Nightmare on Elm St. movies were the same way. Campy, predictable, but they had a way of evoking fear in someone, and that was the fun for me.
Movies now are all about the instant jump scares and such. The older horror movies and the thrill of the hunt and drawing out the tension is what made them enjoyable.
But then again, thats just the opinion of an old man who is partial to 80's slasher flicks.
