I know it sucks, but yea, if they're not going to give you a M rating, then you need to cut the content they say is an issue.
It's not just games though, the Friday the 13th movies have also have numerous things removed to get an R rating from the MPAA. They could always release an uncut version for home video though.
Technically they could do the same thing here on PC, because Steam doesn't require a game to be rated by the ESRB. I know they must have content that they had to remove, and I thought it would be a cool idea to have a free "uncut" DLC for PC, like it was home video release or something, but doubt they would ever do that because of consoles.
I'm sure there will be good nude mods though, because nude models of the counselors were in the game files.
The writers and movie directors never backed down from staying true to the F13 formula, why would the devs?
You can't really compare the two mediums though. Movies are always going to be treated differently than video games, when it comes to content. In a lot of people's minds, video games are still the lesser medium and not aimed at adults, even though we all know that's untrue. But it doesn't matter what we think, really. It matters what the people in charge of rating the games and all think, unfortunately.
Also, I'm more than sure that there were many times when the script writers and directors of the movies had to cut stuff out under orders from executives, either because test audiences didn't like it or because the ratings board didn't like it. It's why we have all the different director's cuts and unrated editions for DVD and all.
As for why those other games get sex and nudity along with their violence, well, as violent as I know GTA and those other games got, I don't think any of them were on par with the sorts of things that Jason is doing to the counselors in this game. So it's kinda on a more extreme end of the spectrum already.

playstation is mainly rather strict with nudity, xbox to an extend also.
same reason why conan exiles for consoles won't have the dong/boob slider in the console version
