Round 1:
Progress Rod + Earth Worm = Trout/Salmon
Metal Rod + Trout/Salmon = Snakehead
Round 2:
Progress Rod + Earth Worm = Crab/Carp
Bamboo + Crab = Granakor
Metal + Carp = Garvelze
Round 3:
Marine Star + Shrimplet = Sea Bass/Kasago,

If your concern is the timing, the "..." bubble on the start is good indicator. You need to tap the catch button in the same rhytm as "..." bubble goes even after that bubble disappeared...
Also don't quote me on this but it seems that if you manage to catch big fish I mentioned above, the enemy will have less chance to catch it. You need to steal it...

They all get pretty decent scores. Perhaps game difficulty is a factor.
